Preparation
  1. Start by placing the dark chocolate chips in a microwave-safe bowl. Heat in the microwave for 30-second intervals, stirring in between, until fully melted. Be cautious not to overheat it!
  2. In a blender or food processor, combine the melted chocolate, cottage cheese, unsweetened cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy—about 1 to 2 minutes.
  3. Once blended, transfer the mousse to serving cups. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld and the texture to firm up beautifully.
  4. Just before serving, feel free to add your choice of toppings—nuts, fruits, or a dollop of whipped cream—and enjoy the richness of your creation!

Notes

For a smoother texture, use smooth cottage cheese. You can prep the mousse a day in advance for special occasions. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Thaw in the refrigerator overnight before serving. Do not microwave the mousse.
