Preparation
- Start by placing the dark chocolate chips in a microwave-safe bowl. Heat in the microwave for 30-second intervals, stirring in between, until fully melted. Be cautious not to overheat it!
- In a blender or food processor, combine the melted chocolate, cottage cheese, unsweetened cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy—about 1 to 2 minutes.
- Once blended, transfer the mousse to serving cups. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld and the texture to firm up beautifully.
- Just before serving, feel free to add your choice of toppings—nuts, fruits, or a dollop of whipped cream—and enjoy the richness of your creation!
Notes
For a smoother texture, use smooth cottage cheese. You can prep the mousse a day in advance for special occasions. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Thaw in the refrigerator overnight before serving. Do not microwave the mousse.
