  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/4 cup honey
  • 1 tablespoon yeast
  • 1 cup warm water (about 110°F)
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Preparation
  1. In a small bowl, mix the warm water and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, and salt. Create a well in the center of the flour mixture.
  3. Pour the activated yeast mixture and honey into the well. Drizzle in the olive oil.
  4. Using a wooden spoon or your hands, mix the dry ingredients into the wet until a shaggy dough forms.
  5. On a floured surface, knead the dough for about 8-10 minutes until it’s smooth and elastic.
  6. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  7. Punch down the dough to release the air. Shape it into a loaf and place it in a greased bread pan.
  8. Cover the pan with a cloth and let it rise again for about 30 minutes.
  9. Preheat your oven to 350°F (175°C) and bake the bread for 30-35 minutes until golden brown and sounds hollow when tapped.
  10. Remove from the oven and let it cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For perfect results, avoid adding too much flour while kneading, and let the dough rise sufficiently to achieve the best texture. Once cooled, store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
