Ingredients
  

For the Bread
  • 2 cups whole wheat flour Make sure the flour is fresh for the best flavor!
  • 1 cup all-purpose flour
  • ½ cup honey
  • 1 cup warm water Not too hot!
  • 2 tablespoons olive oil Can substitute with melted coconut or vegetable oil.
  • 1 tablespoon active dry yeast Make sure the yeast is fresh.
  • 1 teaspoon salt
  • 1 tablespoon brown sugar

Method
 

Preparation
  1. In a small bowl, combine the warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until it foams up.
  2. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, salt, and brown sugar. Create a small well in the center.
  3. Pour the yeast mixture and olive oil into the well and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. After rising, punch down the dough to release air bubbles, then shape it into a loaf.
  7. Place the loaf into a greased bread pan and cover it again. Let it rise for another 30 minutes.
  8. Preheat your oven to 350°F (175°C).
  9. Bake the risen loaf for 25-30 minutes, or until the top is golden brown and sounds hollow when tapped.
  10. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for about 3 months. To reheat, wrap the loaf in foil and warm in the oven at 350°F for 10-15 minutes.
