Preparation
- Preheat the oven to 425°F (220°C).
- Peel the carrots and cut them into uniform sticks or rounds for even cooking.
- In a large bowl, whisk together the honey, olive oil, salt, and pepper until well combined.
- Add the carrot pieces to the bowl and toss to coat evenly with the honey glaze.
- Spread the glazed carrots in a single layer on a parchment-lined baking sheet.
- Roast in the oven for 25-30 minutes, tossing them halfway through to ensure even caramelization.
- Sprinkle fresh herbs on the carrots during the last five minutes of roasting, if using.
- Once tender and caramelized, remove from the oven, adjust seasoning if necessary, and serve warm.
