Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel the carrots and cut them into uniform sticks or rounds for even cooking.
  3. In a large bowl, whisk together the honey, olive oil, salt, and pepper until well combined.
  4. Add the carrot pieces to the bowl and toss to coat evenly with the honey glaze.
  5. Spread the glazed carrots in a single layer on a parchment-lined baking sheet.
  6. Roast in the oven for 25-30 minutes, tossing them halfway through to ensure even caramelization.
  7. Sprinkle fresh herbs on the carrots during the last five minutes of roasting, if using.
  8. Once tender and caramelized, remove from the oven, adjust seasoning if necessary, and serve warm.

Notes

Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes to maintain texture and flavor.
