  • 2 pieces chicken breasts, skinless and boneless
  • 1/4 cup honey The star of the sweet sauce.

  • 1 cup rice Your carbohydrate base.
  • 2 cups broccoli florets Colorful and nutritious.

Method
 

Preparation
  1. Begin by cooking 1 cup of rice according to package instructions. Choose your favorite type—jasmine, basmati, or even brown rice for added nutrients!
  2. While the rice is cooking, cut the chicken breasts into bite-sized pieces for even cooking.
  3. In a bowl, whisk together the honey, soy sauce, and minced garlic. Set this mixture aside for the glaze.
Cooking
  1. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Once heated, add the chicken pieces.
  2. Cook the chicken for about 5-7 minutes, stirring occasionally until the chicken is browned and fully cooked (internal temperature should reach 165°F).
  3. Pour the honey garlic sauce over the chicken and allow it to cook for another 3-4 minutes, stirring until the chicken is well-coated and the sauce is slightly thickened.
  4. Near the last few minutes of cooking the chicken, steam the broccoli florets until tender-crisp.
Serving
  1. To serve, ladle some cooked rice into a bowl, top with the honey garlic chicken, and add the steamed broccoli. Garnish with sesame seeds and sliced green onions for an extra pop.

Notes

You can use chicken thighs instead of breasts for a fattier cut or replace chicken with baked tofu for a vegetarian option. Ensure to not overcook the chicken to prevent dryness. Store leftovers in an airtight container for up to 3 days or freeze separately for up to 2 months.
