Ingredients
  

Broth and Base
  • 2 cups vegetable broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • to taste Salt and pepper
Vegetables
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to swap for seasonal veggies.
  • 2 cloves garlic, minced
  • 1 medium onion, diced
Noodles and Garnish
  • 1 cup egg noodles or soba noodles Cook according to package instructions.
  • to taste Fresh herbs (parsley or cilantro) for garnish Enhances flavor and appearance.

Method
 

Preparation
  1. Gather all your ingredients and chop the onion and garlic.
Cooking
  1. Heat a splash of oil in a large pot over medium heat. Add the diced onion and minced garlic, cooking until translucent, about 3-5 minutes.
  2. Pour in the vegetable broth and water. Stir and bring to a gentle boil.
  3. Add the mixed vegetables into the broth.
  4. Once boiling, add the egg noodles or soba noodles and cook according to package instructions, usually about 5-7 minutes, until al dente.
  5. Season with soy sauce, salt, and pepper to taste. Stir well and let the flavors meld for a couple of minutes.
  6. Ladle the soup into bowls, sprinkle with fresh herbs, and serve.

Notes

Feel free to swap the mixed vegetables for whatever you have at home. Harder vegetables should be added earlier than softer ones to avoid overcooking. Store leftovers in an airtight container for up to 3 days, or freeze for a month without noodles.
