Mix Ingredients
- In a large bowl, combine the chopped onions and bell peppers with all the other ingredients: apple cider vinegar, sugar, salt, ground black pepper, mustard seeds, and garlic powder. Mix well until everything is fully coated.
Cook It Up
- Transfer your mixture to a pot and bring it to a gentle boil over medium heat. Stir occasionally so that it doesn’t stick to the bottom.
Simmer
- Once it starts boiling, reduce the heat to low and let it simmer for about 10-15 minutes. This helps to meld all those flavorful components together.
Cool Down
- After simmering, remove the pot from heat and let the mixture cool. You’ll notice how the texture changes as it cools, becoming thicker and more relish-like.
Jar It
- Once cooled, transfer your relish into clean sterilized jars. Seal and refrigerate.
