  • 2 cups onions, finely chopped
  • 2 cups bell peppers, finely chopped (any color)
  • 1 cup apple cider vinegar Substitutable with white vinegar
  • 1 cup sugar Can experiment with other sweeteners
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon garlic powder

Method
 

Preparation
  1. Start by finely chopping the onions and bell peppers. Aim for uniform pieces to ensure even cooking and marination.
Mix Ingredients
  1. In a large bowl, combine the chopped onions and bell peppers with all the other ingredients: apple cider vinegar, sugar, salt, ground black pepper, mustard seeds, and garlic powder. Mix well until everything is fully coated.
Cook It Up
  1. Transfer your mixture to a pot and bring it to a gentle boil over medium heat. Stir occasionally so that it doesn’t stick to the bottom.
Simmer
  1. Once it starts boiling, reduce the heat to low and let it simmer for about 10-15 minutes. This helps to meld all those flavorful components together.
Cool Down
  1. After simmering, remove the pot from heat and let the mixture cool. You’ll notice how the texture changes as it cools, becoming thicker and more relish-like.
Jar It
  1. Once cooled, transfer your relish into clean sterilized jars. Seal and refrigerate.

Notes

Store in the refrigerator for up to 2 weeks, or freeze portions in airtight containers for about 3 months. Thaw and allow to reach room temperature before serving.
