  • 1/2 cup granulated sugar Can substitute with powdered sugar for different texture
  • 1/4 cup light corn syrup
  • 1/4 teaspoon cream of tartar Helps to stabilize the cream
  • 1 teaspoon vanilla extract Can experiment with other flavor extracts

Preparation
  1. Ensure your mixing bowl is clean and dry.
  2. In a mixing bowl, beat the egg whites on high speed until soft peaks form, about 2-3 minutes.
  3. Gradually add the granulated sugar while continuing to beat until glossy and stiff peaks form, about another 2-3 minutes.
  4. Mix in the light corn syrup and cream of tartar until well combined.
  5. Add the vanilla extract and blend until fully incorporated.
  6. Use immediately or store for later.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week or freeze for up to three months. Whisk again after refrigeration or thawing to regain texture.
