  1. Start by gathering all your ingredients, and then mince your garlic.
  2. In a small bowl, whisk together the fresh lemon juice and Dijon mustard until combined.
  3. Stir in the minced garlic, ensuring it’s evenly distributed throughout the mixture.
  4. Slowly drizzle the olive oil into the mixture while whisking continuously to emulsify the dressing.
  5. Add salt and pepper to taste, and whisk to combine all the flavors.
  6. Taste the dressing to see if any seasonings need adjustment.

Notes

Store in an airtight container in the fridge for 5-7 days. Can be frozen in ice cube trays for up to 3 months. Allow to thaw and shake or whisk before using.
