Preparation
  1. In a large mixing bowl, stir together the cottage cheese, egg, whole wheat flour, baking powder, and a pinch of salt until a soft dough forms.
  2. Lightly flour a clean surface, and place the dough on it. Knead gently for about 1-2 minutes until it becomes smooth.
  3. Cut the dough into four equal sections. Roll each section into a ball.
  4. Using a rolling pin, flatten each ball into a circle about ΒΌ inch thick.
Cooking
  1. In a non-stick skillet, heat a drizzle of olive oil over medium heat.
  2. Add one flatbread to the skillet and cook for about 3-4 minutes, or until you see bubbles forming. Flip and cook for an additional 2-3 minutes, or until golden brown.
  3. Continue this process with the remaining dough.
