Preparation
- Begin by chopping your onion, garlic, and bell pepper. Rinse and drain the beans and set them aside.
Cooking
- In a large pot over medium heat, add the ground turkey. Cook it until it’s browned, which should take about 5-7 minutes. Break it up with a spatula as it cooks.
- Once the turkey is cooked through, add the chopped onion, bell pepper, and minced garlic. Sauté for another 4-5 minutes until the vegetables soften.
- Sprinkle in the chili powder, cumin, salt, and pepper, mixing well to ensure the spices coat the meat and veggies evenly.
- Pour in the diced tomatoes (with their juices), kidney beans, black beans, and the broth. Stir everything together.
- Bring the chili to a gentle boil, then reduce the heat to low. Cover and let it simmer for 20-30 minutes, stirring occasionally.
- Once the chili has thickened, taste it and adjust the seasonings if needed.
- Ladle onto bowls and serve hot with your choice of toppings!
Notes
For perfecting your chili, consider meat substitutes like ground chicken or lentils. Adding extra vegetables like corn or zucchini can enhance nutrition and flavor. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months.
