Preparation
- Preheat the oven to 350°F (175°C).
- Grease a 9x5 inch loaf pan with cooking spray or a little oil.
- In a large bowl, combine the mashed bananas, Greek yogurt, honey, eggs, and vanilla extract. Whisk until blended.
- In a separate bowl, mix together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- If using walnuts or chocolate chips, gently fold them into the batter.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
For best results, use very ripe bananas and avoid overmixing the batter.
