Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/2 cup Greek yogurt Use halal-friendly yogurt.
  • 1/4 cup honey Can substitute with maple syrup.
  • 2 large eggs
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional) Adds flavor.
Mix-Ins (Optional)
  • 1/4 cup walnuts or chocolate chips Choose based on preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan with cooking spray or a little oil.
  3. In a large bowl, combine the mashed bananas, Greek yogurt, honey, eggs, and vanilla extract. Whisk until blended.
  4. In a separate bowl, mix together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. If using walnuts or chocolate chips, gently fold them into the batter.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For best results, use very ripe bananas and avoid overmixing the batter.
