  • 4 cups frozen hash browns, thawed Thaw completely before use.
  • 8 large eggs
  • 1 cup milk (whole or skim)
  • 2 cups shredded cheddar cheese You can use your cheese of choice.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chopped onion Optional ingredient.
  • 1 cup chopped bell peppers Optional ingredient.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch casserole dish with oil or cooking spray.
  3. Spread the thawed hash browns evenly across the bottom of the baking dish, pressing them down slightly.
  4. Sprinkle half of the shredded cheese over the hash browns.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the onion and bell peppers if using.
  6. Pour the egg mixture over the hash brown and cheese layer.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 45 minutes or until the eggs are set and the top is golden.
  9. Let it cool for 5-10 minutes before slicing. Serve hot.

Notes

For variations, feel free to add different vegetables or spices. Ensure the hash browns are thawed and any added vegetables are pre-cooked to avoid excess moisture.
