Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch casserole dish with oil or cooking spray.
- Spread the thawed hash browns evenly across the bottom of the baking dish, pressing them down slightly.
- Sprinkle half of the shredded cheese over the hash browns.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the onion and bell peppers if using.
- Pour the egg mixture over the hash brown and cheese layer.
- Sprinkle the remaining cheese on top.
- Bake for 45 minutes or until the eggs are set and the top is golden.
- Let it cool for 5-10 minutes before slicing. Serve hot.
