- In a large pot, heat a bit of oil over medium heat. Add the ground beef and cook until it's browned, breaking it up with a spoon as it cooks.
- Once the beef is browned, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
- Toss in the sliced carrots, celery, green beans, and corn. Stir well to coat all the veggies with the beef's flavor.
- Pour in the diced tomatoes (with juices) and the beef broth. Stir to combine and bring to a gentle boil.
- Sprinkle in the dried basil, dried oregano, salt, and pepper. Stir well to incorporate the spices.
- Lower the heat to a simmer and cover the pot. Let it cook for about 20 minutes for the flavors to meld.
- Taste and adjust seasoning as needed. Serve hot, topped with shredded cheese or fresh herbs.
Notes
For a leaner option, use ground turkey or chicken. Customize with leftover vegetables or additional spices like cumin or chili powder.
