Ingredients
  

Meat and Base
  • 1 pound ground beef (hamburger) Use lean ground beef for a healthier option.
Vegetables
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 1 can diced tomatoes (14.5 ounces) Including juices.
  • 4 cups beef broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup green beans, chopped
  • 1 cup corn
Seasonings
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat a bit of oil over medium heat. Add the ground beef and cook until it's browned, breaking it up with a spoon as it cooks.
  2. Once the beef is browned, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  3. Toss in the sliced carrots, celery, green beans, and corn. Stir well to coat all the veggies with the beef's flavor.
  4. Pour in the diced tomatoes (with juices) and the beef broth. Stir to combine and bring to a gentle boil.
  5. Sprinkle in the dried basil, dried oregano, salt, and pepper. Stir well to incorporate the spices.
  6. Lower the heat to a simmer and cover the pot. Let it cook for about 20 minutes for the flavors to meld.
  7. Taste and adjust seasoning as needed. Serve hot, topped with shredded cheese or fresh herbs.

Notes

For a leaner option, use ground turkey or chicken. Customize with leftover vegetables or additional spices like cumin or chili powder.
