Ingredients
  

For the Casserole
  • 1 pound ground beef Can be substituted with turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cooked pasta (elbow macaroni works great) Can substitute with whole-grain pasta.
  • 1 can (15 oz) diced tomatoes With their juice.
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning Use a mix of oregano, basil, and thyme if unavailable.
  • to taste Salt and pepper Adjust according to your taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C). Gather and prep all your ingredients.
Cooking
  1. In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes.
  2. Drain any excess fat if necessary. Stir in the cooked pasta, diced tomatoes (with their juice), and kidney beans.
  3. Add Italian seasoning, salt, and pepper; allow to cook together for about 2-3 minutes.
Baking
  1. Transfer the mixture to a lightly greased casserole dish and top it evenly with shredded cheddar cheese.
  2. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly with a golden color.
Serving
  1. Let the casserole cool for a few minutes before serving hot. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in a preheated oven at 350°F until warmed through (about 20 minutes).
