Preparation
- Preheat your oven to 350°F (175°C), greasing and flouring two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until well blended.
- In a separate bowl, whisk together the Guinness beer, eggs, sour cream, melted butter, and vanilla extract until smooth.
- Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Don’t overmix!
Baking
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frosting and Assembly
- In an electric mixer, whip the heavy cream until soft peaks form.
- In another bowl, beat the cream cheese until smooth, then add the powdered sugar and mix until well combined.
- Gently fold in the whipped cream until combined.
- Place one cake layer on a serving plate. Spread a generous amount of frosting on top, then gently place the second layer.
- Finish frosting the top and sides of the cake.
