  • 1 cup unsweetened cocoa powder
  • 1.5 cups sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup Guinness beer
  • 2 large eggs
  • 0.5 cup sour cream or plain yogurt for Halal alternative
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
Frosting
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 0.5 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C), greasing and flouring two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. In a separate bowl, whisk together the Guinness beer, eggs, sour cream, melted butter, and vanilla extract until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Don’t overmix!
Baking
  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frosting and Assembly
  1. In an electric mixer, whip the heavy cream until soft peaks form.
  2. In another bowl, beat the cream cheese until smooth, then add the powdered sugar and mix until well combined.
  3. Gently fold in the whipped cream until combined.
  4. Place one cake layer on a serving plate. Spread a generous amount of frosting on top, then gently place the second layer.
  5. Finish frosting the top and sides of the cake.
Serving

Notes
