  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can enchilada sauce (10-15 oz) Choose your favorite brand.
  • 8 pieces corn tortillas Can substitute with whole wheat or flour tortillas.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to mix cheese varieties.
  • 1/2 cup diced onions Use red or yellow onions.
  • 1/2 cup chopped bell peppers Any color bell pepper is good.
  • 1 tsp garlic powder
  • 1 tsp cumin

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula for about 5-7 minutes.
  3. Mix in the diced onions, chopped bell peppers, garlic powder, cumin, salt, and pepper. Cook for another 3-4 minutes until the vegetables are tender.
  4. Take a tortilla, spoon about 3 tablespoons of the beef mixture into the center, roll it tightly, and place seam-side down in a greased baking dish. Repeat with the remaining tortillas.
  5. Pour the enchilada sauce generously over the tortillas.
  6. Sprinkle shredded cheese on top.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes before serving. Enjoy with your favorite toppings!

Notes

Experiment with different fillings or toppings like sour cream, cilantro, or avocado. Leftovers can be stored in an airtight container for 3-4 days.
