Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula for about 5-7 minutes.
- Mix in the diced onions, chopped bell peppers, garlic powder, cumin, salt, and pepper. Cook for another 3-4 minutes until the vegetables are tender.
- Take a tortilla, spoon about 3 tablespoons of the beef mixture into the center, roll it tightly, and place seam-side down in a greased baking dish. Repeat with the remaining tortillas.
- Pour the enchilada sauce generously over the tortillas.
- Sprinkle shredded cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Enjoy with your favorite toppings!
