  • 1 can green chile enchilada sauce Mild or spicy, depending on taste.
  • 1 can diced green chiles Adds depth of flavor.
  • 8 pieces corn tortillas Cut into halves or thirds for easier layering.
  • 2 cups shredded cheese (cheddar or Mexican blend) Add more for extra gooeyness.
  • 1/2 onion diced Provides crunch and aroma.
  • 1 cup sour cream For a creamy texture.
  • 1 teaspoon garlic powder Essential for flavor.
  • 1 teaspoon cumin Adds a warm, earthy tone.
  • Salt and pepper to taste Adjust according to preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the enchilada sauce, diced green chiles, and 1/2 of the sour cream. Stir well to blend.
  3. In a baking dish, spread a small amount of the sauce mixture on the bottom.
  4. Place 2-3 corn tortillas over the sauce, followed by a layer of shredded chicken, diced onion, and cheese. Repeat the layers until you run out of ingredients, finishing with the sauce on top.
  5. Spread the remaining sour cream over the top layer of sauce, then sprinkle with remaining cheese.
  6. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
  7. Let cool for a few minutes, then slice and serve. Garnish with fresh cilantro or avocado if desired.

Notes

For a unique twist, add black beans or corn between layers. Ensure all ingredients are prepped before layering to save time. Preheat the oven to cook evenly.
