Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the enchilada sauce, diced green chiles, and 1/2 of the sour cream. Stir well to blend.
- In a baking dish, spread a small amount of the sauce mixture on the bottom.
- Place 2-3 corn tortillas over the sauce, followed by a layer of shredded chicken, diced onion, and cheese. Repeat the layers until you run out of ingredients, finishing with the sauce on top.
- Spread the remaining sour cream over the top layer of sauce, then sprinkle with remaining cheese.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes, then slice and serve. Garnish with fresh cilantro or avocado if desired.
Notes
For a unique twist, add black beans or corn between layers. Ensure all ingredients are prepped before layering to save time. Preheat the oven to cook evenly.
