  • 1 pound shrimp, peeled and deveined Fresh shrimp preferred
  • 200 grams feta cheese, crumbled
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 juice of lemon
  • 1 teaspoon dried oregano
  • to taste salt and pepper Adjust to your preference
  • Fresh parsley, chopped (for garnish) Best used fresh

Method
 

Preparation
  1. In a medium bowl, season the shrimp with salt, pepper, and half of the lemon juice. Let it sit for about 10 minutes to absorb the flavors.
Cooking
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, avoiding any browning.
  2. Add the seasoned shrimp to the skillet. Cook for 3-4 minutes or until the shrimp are pink and opaque, turning halfway through for even cooking.
  3. Once the shrimp is cooked, crumble the feta cheese over it and sprinkle oregano on top. Drizzle remaining olive oil and the rest of the lemon juice.
  4. Allow the cheese to melt slightly (about 2 minutes), then remove from heat.
Serving
  1. Garnish with freshly chopped parsley and a squeeze of lemon. Serve with crusty bread or over rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to maintain moisture.
