Preparation
- In a medium bowl, season the shrimp with salt, pepper, and half of the lemon juice. Let it sit for about 10 minutes to absorb the flavors.
Cooking
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, avoiding any browning.
- Add the seasoned shrimp to the skillet. Cook for 3-4 minutes or until the shrimp are pink and opaque, turning halfway through for even cooking.
- Once the shrimp is cooked, crumble the feta cheese over it and sprinkle oregano on top. Drizzle remaining olive oil and the rest of the lemon juice.
- Allow the cheese to melt slightly (about 2 minutes), then remove from heat.
Serving
- Garnish with freshly chopped parsley and a squeeze of lemon. Serve with crusty bread or over rice.
