Ingredients
  

For the Sandwich
  • 4 slices sourdough or whole grain bread Or use pita bread or naan for a unique twist.
  • 1 cup feta cheese, crumbled
  • 0.5 cup Kalamata olives, pitted and chopped
  • 1 cup fresh spinach, roughly chopped Ensure it's cleaned and dried.
  • 1 medium tomato, sliced
  • 2 tablespoons butter or olive oil (for grilling)

Method
 

Preparation
  1. Begin by crumbling the feta cheese and chopping the Kalamata olives. Make sure the spinach is cleaned and dried, and slice the tomato.
  2. In a medium bowl, combine feta cheese, Kalamata olives, spinach, and tomato. Mix until evenly distributed.
Assembly
  1. Lay out the slices of bread. Generously spread the feta mixture on one slice, then top with another slice of bread. Repeat for the second sandwich.
Cooking
  1. In a skillet over medium heat, melt butter or heat olive oil. Once hot, add the assembled sandwiches.
  2. Cook each side for about 3-4 minutes or until golden brown and crispy.
Serving
  1. Once grilled to your satisfaction, slice in halves or quarters, and serve warm.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 2 days or freeze for up to a month. Reheat in a skillet on medium-low heat.
