Preparation
- Begin by crumbling the feta cheese and chopping the Kalamata olives. Make sure the spinach is cleaned and dried, and slice the tomato.
- In a medium bowl, combine feta cheese, Kalamata olives, spinach, and tomato. Mix until evenly distributed.
Assembly
- Lay out the slices of bread. Generously spread the feta mixture on one slice, then top with another slice of bread. Repeat for the second sandwich.
Cooking
- In a skillet over medium heat, melt butter or heat olive oil. Once hot, add the assembled sandwiches.
- Cook each side for about 3-4 minutes or until golden brown and crispy.
