  • 1 cup feta cheese, crumbled
  • 2 pieces lemons (juice and zest)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and season them generously with salt and pepper.
Marinade
  1. In a medium bowl, mix together lemon juice, lemon zest, olive oil, minced garlic, and dried oregano.
  2. Pour the marinade over the chicken breasts, ensuring they are well-coated. If possible, let them marinate for 15 to 30 minutes.
Baking
  1. Sprinkle crumbled feta cheese evenly over the marinated chicken.
  2. Bake in the preheated oven for 25 to 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Let the chicken rest for a couple of minutes after baking, then garnish with fresh parsley. Serve with vegetables or a fresh salad.

Notes

For a Halal-friendly option, substitute chicken with boneless turkey breasts. Marinate for up to 4 hours for enhanced flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
