Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts, boneless and skinless
  • 3 tablespoons Olive Oil, for marinade and dressing
  • 2 tablespoons Greek Seasoning, to taste
For the Bowls
  • 4 cups Lettuce, chopped (Romaine or your favorite type)
  • 1 cup Tomatoes, diced
  • 1 cup Cucumber, diced
  • ½ piece Red Onion, thinly sliced
  • 1 cup Feta Cheese, crumbled
  • ½ cup Kalamata Olives, pitted and sliced
  • 1 cup Tzatziki Sauce, for serving

Method
 

Preparation
  1. In a bowl, combine the chicken breasts, olive oil, and Greek seasoning. Make sure all chicken pieces are coated evenly. Let them marinate for at least 15 minutes to absorb the flavors.
  2. While the chicken marinates, chop the lettuce, tomatoes, cucumber, and red onion. Place the chopped vegetables in bowls.
Cooking
  1. Preheat a grill or stovetop skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
Assembly
  1. Start with a generous scoop of lettuce at the bottom of each bowl. Add a portion of the sliced chicken on top, followed by the tomatoes, cucumbers, and red onion.
  2. Finish off the bowls with a sprinkle of crumbled feta cheese and a handful of sliced kalamata olives. Drizzle tzatziki sauce generously over the top.
  3. Gather around the table and dig into your delicious Greek Chicken Bowls!

Notes

For a Halal-friendly option, replace chicken with turkey or lamb. Let the chicken rest after grilling to retain its juiciness. Avoid overcrowding the grill or skillet for optimal grilling.
