Preparation
- In a bowl, combine the chicken breasts, olive oil, and Greek seasoning. Make sure all chicken pieces are coated evenly. Let them marinate for at least 15 minutes to absorb the flavors.
- While the chicken marinates, chop the lettuce, tomatoes, cucumber, and red onion. Place the chopped vegetables in bowls.
Cooking
- Preheat a grill or stovetop skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
Assembly
- Start with a generous scoop of lettuce at the bottom of each bowl. Add a portion of the sliced chicken on top, followed by the tomatoes, cucumbers, and red onion.
- Finish off the bowls with a sprinkle of crumbled feta cheese and a handful of sliced kalamata olives. Drizzle tzatziki sauce generously over the top.

Notes
For a Halal-friendly option, replace chicken with turkey or lamb. Let the chicken rest after grilling to retain its juiciness. Avoid overcrowding the grill or skillet for optimal grilling.
