Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For the Bowls
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1/2 piece red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
  • Lemon wedges for serving

Preparation
  1. In a small bowl, mix the olive oil, dried oregano, salt, and pepper to create a marinade. Coat the chicken breasts in this blend and let them marinate for about 10-15 minutes.
Cooking
  1. Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes on each side until fully cooked and golden brown. The internal temperature should reach 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
Assembly
  1. While the chicken is resting, prepare the quinoa according to package instructions if you haven't already. In a bowl, add quinoa as the base, followed by the sliced chicken, halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta.
Serving
  1. Squeeze fresh lemon juice over each bowl for a zesty finish. Enjoy immediately!
