  • 2 medium zucchinis (grated) Select firm zucchinis without soft spots.
  • 3 eggs Large eggs are preferred.
  • 150 g flour All-purpose flour works best.
  • 100 ml milk Any kind of milk can be used.
  • 1 tsp baking powder Ensure it's fresh for best results.
  • to taste Salt and pepper Adjust according to preference.
  • as needed Olive oil (for greasing) Use extra-virgin olive oil for flavor.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Grease your baking dish with olive oil.
  3. Grate the zucchinis and remove excess moisture using a clean kitchen towel.
  4. In a large bowl, whisk together the eggs and milk, then mix in the crumbled goat cheese.
  5. In a separate bowl, mix the flour, baking powder, salt, and pepper, then gradually fold it into the wet mixture.
  6. Gently stir the grated zucchinis into the batter until just combined.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool slightly in the dish before transferring it to a wire rack. Slice and serve warm.

Notes

Store tightly wrapped in plastic wrap or in an airtight container for up to 3 days in the refrigerator. Can be frozen for about a month.
