Preparation
- Preheat your oven to 180°C (350°F).
- Grease your baking dish with olive oil.
- Grate the zucchinis and remove excess moisture using a clean kitchen towel.
- In a large bowl, whisk together the eggs and milk, then mix in the crumbled goat cheese.
- In a separate bowl, mix the flour, baking powder, salt, and pepper, then gradually fold it into the wet mixture.
- Gently stir the grated zucchinis into the batter until just combined.
Baking
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool slightly in the dish before transferring it to a wire rack. Slice and serve warm.
Notes
Store tightly wrapped in plastic wrap or in an airtight container for up to 3 days in the refrigerator. Can be frozen for about a month.
