  • 9 pieces lasagna noodles Regular or gluten-free noodles can be used.
  • 1 pound shrimp (peeled and deveined) Fresh or frozen shrimp can be used.
  • 4 tablespoons butter Unsalted butter is preferred.
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped) Can substitute with dried parsley.
  • 2 tablespoons lemon juice Freshly squeezed lemon juice is recommended.
  • 1 cup Parmesan cheese (grated) Freshly grated Parmesan is ideal.
  • 2 cups mozzarella cheese (shredded) You can use part-skim or whole milk mozzarella.
  • 1 cup heavy cream For a lighter option, use half-and-half.
  • to taste salt and pepper Adjust according to preferences.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot with boiling salted water, cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add minced garlic, cooking until fragrant for about 1-2 minutes.
  4. Add the shrimp into the skillet and cook until they are pink and opaque, about 4-5 minutes. Stir in lemon juice, parsley, salt, and pepper.
Assembly
  1. In a baking dish, spread a thin layer of heavy cream at the bottom. Start layering with lasagna noodles, half of the shrimp mixture, half of the mozzarella, and sprinkle some Parmesan. Repeat layers, finishing with noodles topped with the remaining cream and cheeses.
Cooking
  1. Cover with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is bubbly and golden.
  2. Let it cool for a few minutes before serving. Garnish with more parsley if desired, and enjoy!

Notes

Shrimp can be substituted with chicken for a different flavor. Be sure not to overcook the noodles as they will soften further during baking. For storing, cover tightly and refrigerate for up to three days or freeze for up to two months.
