Preparation
- Preheat the oven to 350°F (175°C) and grease or line a baking pan with parchment paper.
- In a medium saucepan, melt the butter over low heat and let it cool slightly.
- In a large mixing bowl, combine the melted butter and granulated sugar. Whisk until smooth, then add the eggs one at a time and whisk until well combined. Stir in vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the rainbow sprinkles.
Baking
- Pour the batter into your prepared baking dish, spreading it evenly with a spatula. Bake for about 25 minutes or until the edges are set but the center remains fudgy.
- Allow the brownies to cool in the pan before cutting into bite-sized pieces.
Serving
- Serve Fudgy Rainbow Brownie Bites at family gatherings or as a special treat on a wintry night.
Notes
For a fudgier brownie, slightly underbake them. They will continue to cook while cooling. Store in an airtight container for up to 3 days or freeze for a month.
