Ingredients
  

Main Ingredients
  • 1 bag Fritos corn chips
  • 2 cups corn (canned or frozen) If using frozen corn, make sure to thaw it first.
  • 1 cup diced tomatoes Dice before adding.
  • 1 cup shredded cheese (cheddar or Mexican blend) Optional to substitute with Halal-friendly cheese.
  • 1/2 cup green onions, chopped Chop before mixing.
Dressing
  • 1 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 packet ranch dressing mix

Method
 

Preparation
  1. Gather all your ingredients.
  2. If you’re using frozen corn, make sure to thaw it first. Rinse canned corn to remove excess sodium.
  3. Chop the green onions and dice the tomatoes.
Mixing
  1. In a large mixing bowl, combine the mayonnaise and ranch dressing mix. Stir until well-blended.
  2. Add in the corn, diced tomatoes, and green onions. Mix gently to coat everything in the dressing.
Final Touch
  1. Just before serving, fold in the Fritos corn chips to keep them crunchy.
  2. Allow the salad to chill in the refrigerator for about 30 minutes before serving.

Notes

Store leftovers in an airtight container for 3-4 days. To maintain Fritos' crunch, keep them separate until serving. You can freeze the corn and veggie mixture before adding the Fritos.
