- Begin by rinsing your catfish fillets under cold water and patting them dry with paper towels.
- In a shallow bowl, pour the buttermilk. Soak the fillets in the buttermilk for at least 15 minutes.
- Combine cornmeal, flour, salt, black pepper, and cayenne pepper in a separate bowl.
- In a large skillet or frying pan, pour in enough oil to cover the bottom (about ½ inch deep) and heat over medium-high heat.
Cooking
- Take a fillet from the buttermilk, shake off the excess, and dredge in the cornmeal mixture.
- Gently place the coated fillet into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the cooked fillets and place them on a plate lined with paper towels to drain excess oil.
