  • 4 pieces Catfish fillets (preferably boneless)
  • 1 cup Cornmeal
  • ½ cup All-purpose flour
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Cayenne pepper (adjust to taste)
  • 1 cup Buttermilk
  • Oil for frying (vegetable or canola)

Method
 

Preparation
  1. Begin by rinsing your catfish fillets under cold water and patting them dry with paper towels.
  2. In a shallow bowl, pour the buttermilk. Soak the fillets in the buttermilk for at least 15 minutes.
  3. Combine cornmeal, flour, salt, black pepper, and cayenne pepper in a separate bowl.
  4. In a large skillet or frying pan, pour in enough oil to cover the bottom (about ½ inch deep) and heat over medium-high heat.
Cooking
  1. Take a fillet from the buttermilk, shake off the excess, and dredge in the cornmeal mixture.
  2. Gently place the coated fillet into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
  3. Remove the cooked fillets and place them on a plate lined with paper towels to drain excess oil.
Serving
  1. Serve your Fried Catfish hot with fresh lemon wedges and your favorite dipping sauce or side dishes like coleslaw.

Notes

For alternatives to buttermilk, use a mixture of milk with a splash of lemon juice or vinegar. Avoid overcrowding the pan to ensure even cooking.
