  2. Rinse cucumbers and slice them thinly, or use a spiralizer for fun shapes.
  3. In a small bowl, combine olive oil, lemon juice, salt, and pepper; whisk until blended.
  4. In a large salad bowl, toss together sliced cucumbers, beets, and fresh herbs.
  5. Drizzle the dressing over the salad and gently toss to coat all ingredients.
  6. Let the salad sit for 5 minutes to meld flavors, then serve fresh.

Notes

For added crunch, consider including nuts like walnuts or sunflower seeds. Prepare beets and cucumbers a day ahead and combine just before serving for maximum freshness.
