  • 1 loaf loaf of bread (such as challah or brioche) Feel free to use whole grain or gluten-free bread.
  • 6 large large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup strawberries, chopped Use fresh, ripe strawberries.
  • 1 cup blueberries Use fresh, ripe blueberries.
For Serving
  • to taste Powdered sugar Optional for serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Slice the bread into 1-inch cubes and place them in a greased 9x13 inch baking dish.
  3. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon until well combined.
  4. Pour the custard evenly over the bread cubes, ensuring every piece is submerged.
  5. Add the chopped strawberries and blueberries on top of the bread mixture, gently pressing them in.
  6. Let the casserole sit for about 10-20 minutes to allow the bread to soak up the custard.
Baking
  1. Place the casserole in the preheated oven and bake for about 45-50 minutes or until the top is golden brown and firm to the touch.
Serving
  1. Remove from the oven and allow it to cool slightly before serving. Dust with powdered sugar if desired.

Notes

For an easy morning, you can prepare the casserole the night before and refrigerate overnight. Bake straight from the fridge in the morning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
