Preparation
- Preheat your oven to 325°F (160°C).
- In a large bowl, combine graham cracker crumbs with sugar and melted butter. Stir until the mixture resembles wet sand. Press this mixture into the bottom of a greased 9×13 inch pan. Bake for 10 minutes, then remove from the oven to cool slightly.
- In another bowl, beat softened cream cheese with an electric mixer until smooth and creamy. Add pumpkin puree, sugar, eggs, vanilla extract, pumpkin pie spice, and salt. Beat until fully combined and no lumps remain.
- Pour the cream cheese mixture over the cooled crust, spreading it evenly with a spatula.
- Return the pan to the oven and bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
- Once baked, allow the bars to cool to room temperature, then refrigerate for at least 2-4 hours before slicing into squares.
Serving
- Cut into squares and serve chilled. Add optional toppings like whipped cream or a drizzle of honey if desired.

Substitutions: For a lighter version, use low-fat cream cheese or a dairy alternative. Ensure it's Halal-friendly. Overbaking can lead to cracks; keep an eye on your bars.
