Ingredients
  

Crust and Filling
  • 1 cup butter, softened Make sure your butter is at room temperature for easy mixing.
  • 1 cup sugar
  • 2 cups all-purpose flour Can be substituted with a 1:1 gluten-free flour blend.
  • 1 cup raspberry jam Feel free to use any high-quality jam.
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with butter or line it with parchment paper.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy (about 3-5 minutes).
  4. Beat in the egg until well incorporated.
  5. Gradually add the flour to the mixture and stir until the dough comes together.
  6. Divide the dough into two portions. Press about two-thirds of the dough evenly into the bottom of the baking dish.
  7. Spread the raspberry jam on top in a smooth layer, then crumble the remaining dough over the jam.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden brown.
  2. Allow to cool in the baking dish before cutting into squares or rectangles.

Notes

These bars can be topped with powdered sugar or whipped cream for extra luxury. For a twist, try different fruit jams like strawberry or blueberry.
