Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x13 inch baking dish with butter or line it with parchment paper.
- In a large bowl, cream the softened butter and sugar together until light and fluffy (about 3-5 minutes).
- Beat in the egg until well incorporated.
- Gradually add the flour to the mixture and stir until the dough comes together.
- Divide the dough into two portions. Press about two-thirds of the dough evenly into the bottom of the baking dish.
- Spread the raspberry jam on top in a smooth layer, then crumble the remaining dough over the jam.
Baking
- Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden brown.
- Allow to cool in the baking dish before cutting into squares or rectangles.
Notes
These bars can be topped with powdered sugar or whipped cream for extra luxury. For a twist, try different fruit jams like strawberry or blueberry.
