Ingredients

  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • to taste none Salt and pepper

Method
 

Preparation
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix using your hands to incorporate the flavors.
  2. Take small handfuls of the mixture and shape them into oval patties or form them around skewers.
  3. Preheat your grill to medium-high heat or your skillet over medium-high on the stovetop. Lightly oil the grill grates if using a grill.
Cooking
  1. Grill the kafta for about 5-7 minutes per side until browned and cooked through.
  2. If using a skillet, cook until golden brown and no longer pink inside.
Serving
  1. Let the kafta rest for a few minutes. Serve warm with garlic sauce, yogurt sauce, tomatoes, lettuce, or pickles.
  2. Enjoy the kaftas with friends and family!

Notes

Substitutions: Use fresh cilantro if you lack parsley or add chili flakes or lemon zest for variation. Make sure to rest the kafta after cooking for juiciness.
