Preparation
- Gather all your ingredients. Shell the edamame if it’s not pre-shelled, and dice the bell pepper. Shred the carrot, and slice the green onions.
Make the Dressing
- In a small bowl, whisk together the soy sauce, sesame oil, and rice vinegar until combined.
Combine the Salad
- In a large mixing bowl, combine the shelled edamame, roasted peanuts, diced bell pepper, shredded carrot, and sliced green onions.
Dress the Salad
- Pour the dressing over the salad and gently toss to combine. Coat everything nicely to allow flavors to meld together.
Season and Serve
- Taste your salad and add salt and pepper to your liking. Serve immediately for the best crunch.
