  • 2 cups edamame (shelled) You can use frozen edamame; just cook according to package instructions.
  • 1 cup roasted peanuts Feel free to substitute with sunflower seeds if preferred.
  • 1 piece bell pepper (diced) Any color bell pepper will work.
  • 1 medium carrot (shredded) Shred freshly for the best texture.
  • 2 tablespoons soy sauce Ensure it’s vegan if needed.
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste Adjust seasoning based on personal preference.

Preparation
  1. Gather all your ingredients. Shell the edamame if it’s not pre-shelled, and dice the bell pepper. Shred the carrot, and slice the green onions.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, sesame oil, and rice vinegar until combined.
Combine the Salad
  1. In a large mixing bowl, combine the shelled edamame, roasted peanuts, diced bell pepper, shredded carrot, and sliced green onions.
Dress the Salad
  1. Pour the dressing over the salad and gently toss to combine. Coat everything nicely to allow flavors to meld together.
Season and Serve

Notes
