- In a medium-sized pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent and fragrant.
- Stir in the bell pepper, zucchini, and carrot. Season with a pinch of salt and pepper. Cook for an additional 5-7 minutes, allowing the vegetables to soften.
- Pour in the crushed tomatoes, and add in dried oregano and basil. Stir everything together, combining the luscious flavors.
- Allow the sauce to simmer on low heat for 10-15 minutes, stirring occasionally. This step allows the flavors to meld and deepen.
- Before serving, taste the sauce. Adjust with extra salt, pepper, or herbs to your liking.
Notes
