Ingredients
  

Vegetable Base
  • 2 tablespoons olive oil For sautéing
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 carrot, diced
Sauce Components
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Preparation
  1. In a medium-sized pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent and fragrant.
  3. Stir in the bell pepper, zucchini, and carrot. Season with a pinch of salt and pepper. Cook for an additional 5-7 minutes, allowing the vegetables to soften.
  4. Pour in the crushed tomatoes, and add in dried oregano and basil. Stir everything together, combining the luscious flavors.
  5. Allow the sauce to simmer on low heat for 10-15 minutes, stirring occasionally. This step allows the flavors to meld and deepen.
  6. Before serving, taste the sauce. Adjust with extra salt, pepper, or herbs to your liking.

Notes

Feel free to swap in any veggies such as spinach, mushrooms, or eggplant! The longer you let it simmer, the richer the flavors will become. Make sure to store leftovers in an airtight container for up to 5 days or freeze for up to 3 months.
