Pasta and Base
  • 8 oz pasta (any type you prefer, such as spaghetti or penne)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
Main Ingredients
  • 1 can (15 oz) diced tomatoes
  • 2 cups fresh spinach
  • to taste Salt and pepper
  • to serve Parmesan cheese (ensure it's halal-certified)

Method
 

Cooking Process
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it!
  3. Pour in the can of diced tomatoes with their juices. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  4. Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes. Season the mixture with salt and pepper to taste.
  5. Toss the cooked pasta into the skillet with the tomato-spinach mixture. If it's a bit dry, add a splash of reserved pasta water to help combine everything. Mix until evenly coated.
  6. Plate your pasta, sprinkling Parmesan cheese on top before serving. Enjoy your delicious creation!

Notes

Consider adding extra seasonings or a drizzle of olive oil for enhanced flavor. If you have leftovers, refrigerate in an airtight container for up to 3 days or freeze for up to a month. Reheat in a skillet over medium heat with a splash of water or olive oil.
