- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it!
- Pour in the can of diced tomatoes with their juices. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
- Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes. Season the mixture with salt and pepper to taste.
- Toss the cooked pasta into the skillet with the tomato-spinach mixture. If it's a bit dry, add a splash of reserved pasta water to help combine everything. Mix until evenly coated.
- Plate your pasta, sprinkling Parmesan cheese on top before serving. Enjoy your delicious creation!
