Preparation
- In a large pot over medium heat, add your ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
- Stir in the black beans, kidney beans, and corn. Let that warmth fill your kitchen as you mix everything together.
- Pour in the can of diced tomatoes (with their juice) and sprinkle the taco seasoning over the mixture. Stir well to combine all the flavors.
- Pour the beef or chicken broth into the pot. Bring to a simmer, letting the soup bubble gently for about 10 minutes.
- Give it a little taste and add salt or extra seasoning if desired. Simmer for an additional 2-3 minutes.
- Ladle the soup into bowls and let everyone load up with their favorite toppings! Enjoy!
Notes
For substitutions, use ground chicken or any Halal-certified protein. For vegetarians, skip the meat and add an extra can of beans. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat slowly, adding broth or water if too thick.
