  • 1 lb ground beef or turkey (Halal-certified)
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning (check for Halal certification)
  • 2 cups beef or chicken broth (Halal-certified)
Optional Toppings
  • shredded cheese To taste
  • sour cream To taste
  • tortilla chips To taste

Method
 

Preparation
  1. In a large pot over medium heat, add your ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon (about 5-7 minutes).
  2. Stir in the black beans, kidney beans, and corn. Let that warmth fill your kitchen as you mix everything together.
  3. Pour in the can of diced tomatoes (with their juice) and sprinkle the taco seasoning over the mixture. Stir well to combine all the flavors.
  4. Pour the beef or chicken broth into the pot. Bring to a simmer, letting the soup bubble gently for about 10 minutes.
  5. Give it a little taste and add salt or extra seasoning if desired. Simmer for an additional 2-3 minutes.
  6. Ladle the soup into bowls and let everyone load up with their favorite toppings! Enjoy!

Notes

For substitutions, use ground chicken or any Halal-certified protein. For vegetarians, skip the meat and add an extra can of beans. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat slowly, adding broth or water if too thick.
