Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
- In a skillet, brown the ground beef or turkey over medium heat for 5-7 minutes, breaking it into small pieces. Drain excess fat if using beef.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning into the meat mixture. Heat through for about 3 minutes.
Assembly
- Layer the casserole by placing corn tortilla pieces on the bottom of the dish, followed by half of the meat mixture and a layer of shredded cheese. Repeat until all ingredients are layered, finishing with a top layer of cheese.
Baking
- Bake in the oven for 25-30 minutes until the cheese is bubbling and golden.
- Let it cool for a few minutes before serving. Garnish with sour cream and green onions.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer shelf life. Reheat in the oven at 350°F (175°C) for about 15 minutes or until warmed through.
