  • 1 lb ground beef or turkey (Halal-certified) Can substitute with lentils or quinoa for vegetarian option.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning (check for Halal certification)
  • 8 to 10 pieces corn tortillas, cut into pieces
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  2. In a skillet, brown the ground beef or turkey over medium heat for 5-7 minutes, breaking it into small pieces. Drain excess fat if using beef.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning into the meat mixture. Heat through for about 3 minutes.
Assembly
  1. Layer the casserole by placing corn tortilla pieces on the bottom of the dish, followed by half of the meat mixture and a layer of shredded cheese. Repeat until all ingredients are layered, finishing with a top layer of cheese.
Baking
  1. Bake in the oven for 25-30 minutes until the cheese is bubbling and golden.
  2. Let it cool for a few minutes before serving. Garnish with sour cream and green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer shelf life. Reheat in the oven at 350°F (175°C) for about 15 minutes or until warmed through.
