Ingredients
  

For the Ceviche
  • 1 lb shrimp, peeled and deveined Choose the freshest shrimp for best flavor.
  • 1 cup lime juice This will 'cook' the shrimp.
  • 1/2 cup chopped red onion
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1 jalapeño, diced Adjust spice level to taste.
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Rinse the shrimp under cold water, ensuring they are peeled and deveined.
Marination
  1. Combine the shrimp with lime juice in a medium bowl, ensuring they are fully submerged. Cover and marinate in the refrigerator for 15-20 minutes, or until the shrimp are opaque and firm.
Adding Ingredients
  1. Drain excess lime juice, leaving enough for flavor. Add the chopped red onion, diced tomatoes, fresh cilantro, and jalapeño. Season with salt and pepper to taste.
Mix and Serve
  1. Gently toss all ingredients together until well combined. Serve immediately with tortilla chips, in tacos, or on its own.

Notes

Store leftovers in an airtight container in the fridge for about 2-3 days. Best enjoyed fresh, do not freeze.
