Ingredients
  

For the filling
  • 1 cup red lentils Rinsed thoroughly
  • 2 cups water For cooking the lentils
  • 1 teaspoon cumin To season the lentils
  • to taste Salt Add according to preference
For the wraps
  • 4 whole wheat wraps For wrapping the filling
  • 1 Vegetables for filling (e.g., spinach, tomatoes, cucumbers) Choose your favorites for added texture and flavor

Method
 

Preparation
  1. Rinse the red lentils under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat, cover, and let them simmer for about 15-20 minutes, or until they are tender.
  3. Once the lentils are cooked, remove them from the heat and stir in cumin and salt to taste. You may choose to mash the lentils slightly with a fork for a smoother texture or keep them whole for a heartier feel.
  4. While the lentils are cooling, lay your whole wheat wraps flat on a clean surface.
  5. Spoon a generous amount of the seasoned lentils onto each wrap, then pile on your choice of fresh vegetables. Roll your wraps tightly, then slice them in half if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep veggies separate until ready to eat to maintain freshness. Reheat lentil mixture in the microwave or on the stovetop, and lightly heat wraps in a skillet if desired.
