Preparation
- Rinse the red lentils under cold water until the water runs clear to remove excess starch.
- In a medium pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat, cover, and let them simmer for about 15-20 minutes, or until they are tender.
- Once the lentils are cooked, remove them from the heat and stir in cumin and salt to taste. You may choose to mash the lentils slightly with a fork for a smoother texture or keep them whole for a heartier feel.
- While the lentils are cooling, lay your whole wheat wraps flat on a clean surface.
- Spoon a generous amount of the seasoned lentils onto each wrap, then pile on your choice of fresh vegetables. Roll your wraps tightly, then slice them in half if desired.

Notes
