Preparation
  1. Preheat your oven to 200°F.
  2. Wash the cherry tomatoes and remove their stems. In a bowl, combine them with olive oil, minced garlic, salt, and black pepper. Toss gently to coat each tomato evenly.
  3. Line a baking sheet with parchment paper and spread the coated cherry tomatoes in a single layer.
  4. Sprinkle your fresh herbs over the tomatoes.
Cooking
  1. Place the baking sheet in the oven and roast for about 2-3 hours, or until the tomatoes are shriveled yet still juicy.
  2. Remove the tomatoes from the oven and let them cool completely.
Storage
  1. Transfer the cooled tomatoes into sterilized jars and store them submerged in oil.

Notes

Store in an airtight container in the refrigerator for 1-2 weeks. Freeze with oil for optimal texture. Reheat gently to use in various dishes.
