Preparation
- Preheat your oven to 400°F (200°C) to ensure even cooking.
- In a large bowl, combine the cubed potatoes, minced garlic, dried thyme, salt, and pepper. Toss thoroughly to coat the potatoes in seasoning.
Cooking
- In an oven-safe skillet over medium heat, melt the butter. Add the chicken thighs skin-side down and sear for about 5 minutes until the skin turns golden brown.
- Carefully place the seasoned potatoes around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are fork-tender.
- Remove from the oven, garnish with fresh parsley, and serve hot.
Notes
For best results, pat the chicken dry before searing for crispy skin. If desired, use chicken legs or breasts instead of thighs, and add your favorite vegetables for variety. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
