  • 2 cups almond flour Base for the calzone dough
  • 2 large eggs Provides structure and moisture
  • 2 cups shredded mozzarella cheese Adds creaminess and flavor
  • 1 tablespoon baking powder Leavening agent for fluffiness
  • 1/2 teaspoon salt Enhances flavor
Filling Ingredients
  • 1 cup pepperoni slices Or preferred halal filling
  • 1/2 cup pizza sauce For adding flavor and moisture
  • 1 teaspoon Italian seasoning For added aroma and taste

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the almond flour, baking powder, and salt.
  3. Add the eggs and shredded mozzarella cheese. Stir until a dough forms.
  4. Knead the dough with your hands until smooth and well combined, about 2-3 minutes.
  5. Roll the dough out between two sheets of parchment paper to about 1/4 inch thick.
  6. Cut out circles from the dough, approximately 5-6 inches in diameter.
  7. Place a spoonful of pizza sauce onto one half of each circle and top with pepperoni or your choice of halal fillings.
  8. Fold the empty half of the dough over the filling and press the edges together. Use a fork to crimp the edges.
Baking
  1. Place the calzones on a parchment-lined baking sheet and bake for 12-15 minutes, or until golden brown.
  2. Let them cool for a few minutes before serving. Choose your favorite dipping sauce and enjoy.

Notes

Substitutions can include grilled chicken, sautéed mushrooms, or spinach. Be careful not to overfill the calzones to avoid bursting during baking. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
