Ingredients
  

Wet Ingredients
  • 2 ripe bananas, mashed Use overripe bananas for best flavor.
  • 1/4 cup honey or maple syrup Adjust sweetness to preference.
  • 1/4 cup coconut oil, melted Can substitute with any neutral oil.
  • 1/2 teaspoon vanilla extract
Dry Ingredients
  • 2 cups rolled oats Ensure using rolled oats for crunch.
  • 1/2 cup chopped walnuts or pecans Can substitute with almonds or sunflower seeds.
  • 1/2 teaspoon cinnamon Add more if you prefer a stronger flavor.
  • 1/2 cup chocolate chips Optional, for added sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth. Add in the melted coconut oil, honey or maple syrup, and vanilla extract. Mix well.
  3. In another bowl, combine the rolled oats, chopped walnuts or pecans, and cinnamon. Gradually add the banana mixture to the dry ingredients, stirring until well-coated.
  4. Line a baking sheet with parchment paper. Spread the granola mixture evenly on the sheet, ensuring it’s in a single layer.
Baking
  1. Bake for 25-30 minutes, stirring halfway through for even browning.
  2. If using chocolate chips, sprinkle them over the granola while it’s still warm.
  3. Let it cool completely on the baking sheet before transferring to an airtight container.

Notes

Store in an airtight container for up to two weeks. For larger batches, freeze individual portions for up to three months.
