Preparation
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper to prevent sticking.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until a dough forms, being careful not to overmix.
- Cover the dough with plastic wrap and chill it in the refrigerator for about 30 minutes.
Baking
- On a floured surface, roll out the dough to about 1/4 inch thick. Use cookie cutters to create fun shapes.
- Place them on the prepared baking sheets.
- Bake for 8-10 minutes or until the edges are golden.
- Allow to cool on the baking sheets for a few minutes before transferring to a wire rack.
Notes
Chilling the dough is key to prevent spreading. Try swapping vanilla for almond extract for a twist or add sprinkles before baking.
