  • 1 package potato dumplings
  • 1 pound chicken sausage, sliced can substitute with turkey or beef sausage
  • 1 can cream of mushroom soup can use different mushroom types for variation
  • 1 cup chicken broth
  • 1 cup shredded cheese (optional) stir into sauce mixture if desired
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • Salt and pepper to taste

Method
 

Preparation
  1. Chop the onions and bell peppers into small pieces.
Layering
  1. In your crockpot, add the sliced chicken sausage, chopped onions, and chopped bell peppers. Spread them evenly across the bottom.
Adding Dumplings
  1. Place the potato dumplings on top of the chicken sausage and vegetables.
Mixing Sauce
  1. In a separate bowl, blend the cream of mushroom soup with the chicken broth. Season with salt and pepper to taste.
  2. If you wish to add cheese, stir it into the mixture as well.
Cooking
  1. Pour the sauce mixture over the layers in the crockpot ensuring everything is well-covered.
  2. Cover the crockpot and cook on low for 4-6 hours or high for 2-3 hours until the dumplings are cooked through and the sausage is tender.
Serving
  1. Once finished, give it a gentle stir, and your casserole is ready to delight taste buds!

Notes

For storing leftovers, cool before placing in an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months. Reheat in microwave or crockpot, adding broth if necessary.
