Ingredients
  

Dry ingredients
  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder Sift to prevent lumps
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet ingredients
  • 2 large eggs Use room temperature for better blending
  • 1 cup whole milk Use room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Careful, batter will be thin

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large mixing bowl, combine the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir until fully mixed.
  4. Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed until well combined, about 2 minutes.
  5. Carefully stir in the boiling water.
  6. Pour the batter evenly into the prepared cake pans.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
Serving
  1. Enjoy as is, or top with frosting, fresh fruit, or powdered sugar.

Notes

To store, keep covered at room temperature for up to 3 days or refrigerate for up to a week. To freeze, wrap slices in plastic and store in an airtight container for up to 3 months.
