Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli, cream of chicken soup, shredded cheddar cheese, milk, garlic powder, onion powder, and season with salt and pepper. Stir well until everything is fully incorporated.
- Lightly grease a 9x13-inch casserole dish with cooking spray or a little bit of oil.
- Pour the mixture into the prepared casserole dish, spreading evenly across the surface.
- In a separate bowl, mix the crushed Ritz crackers with melted butter until evenly coated, and sprinkle over the top of the casserole.
- Bake in the preheated oven for 30 minutes until the top is golden brown and the casserole is bubbly.
- Once done, remove it from the oven, let it cool for a few moments, and then serve warm.
Notes
For substitutions, feel free to mix and match vegetables like cauliflower or green beans. Allow the dish to rest for about 5 minutes after baking for better serving. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
