Ingredients

For the Marinade
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
For the Fish
  • 4 pieces grouper fillets (about 6 ounces each) Opt for fresh if possible.
  • Fresh herbs (like parsley or thyme, for garnish)

Method

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Place the grouper fillets in a shallow dish and pour the marinade over them. Allow them to marinate for at least 15 minutes.
  3. While the grouper marinates, preheat your grill to medium-high heat (about 375°F).
Cooking
  1. Once the grill is hot, place the grouper fillets on the grill. Cook for about 4-5 minutes on each side or until the fish flakes easily with a fork and has nice grill marks.
  2. Remove the fish from the grill and let it rest for a few minutes. Serve warm, garnished with fresh herbs and an additional drizzle of olive oil if desired.

Notes

For best results, use fresh grouper and avoid overcooking, which can lead to dryness. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
