Preparation
  1. Gather all your ingredients and have them ready for use.
  2. In a mixing bowl, combine the lemon juice and Dijon mustard.
  3. Stir in the minced garlic and honey (if using) to the lemon-mustard mixture.
  4. While whisking continuously, slowly drizzle in the olive oil.
  5. Add salt and pepper to taste.
  6. Taste the dressing and adjust with more lemon juice, salt, or olive oil as needed.
  7. Enjoy immediately or store in the refrigerator for later use.

Notes

Avoid overmixing to keep the dressing velvety and smooth. For garlic lovers, roasting the garlic first can smoothen the flavor. Substitute olive oil with avocado oil if desired.
